Almond Milk
Why go store-bought when you can create your very own creamy almond milk at home? It’s simple! And the taste is a world away from the store-bought stuff (I never drink it from coffee shops). No more gums, oils, and packaging! And it’s super simple!

2 cups RAW, organic almonds (SOAKED OVERNIGHT - see below)
Filtered water (NOTE - there is no “correct” amount of water here, other than to make sure that the almonds blend completely. I begin with this level and add a little extra as needed. I prefer the milk to be on the heavier side so it foams well, but if you like your milk lighter, you can add more water, if you’d like to make it more on the “half & half” side, use less water and use a plunger to ensure all of the nuts are blended well before straining).
THE NIGHT BEFORE
Submerge the almonds in filtered water and leave overnight. This is to both soften the almonds but also to activate them and remove phytic acid. Curious? CLICK HERE to learn more!
THE FOLLOWING DAY
Drain and rinse the almonds and place them in a powerful blender (we use a Vitamix)
Top up with fresh water to around 1 inch above the line of the almonds. SEE NOTE ABOVE
Blend for a minute or two, until totally broken down, adding small amounts of water to make sure all of the almonds are blended. SEE NOTE ABOVE
Place the nut milk bag into a clean jar (I put this on a plate to catch any spills)
Pour around 3/4 cup of the mixture into the bag (you will need to squeeze it out with your hand so don’t overfill!). Twist the top of the bag and squeeze the milk into the jar, holding the top so that none of the pulp escapes and wringing out as much of the milk as possible.
Shake the dry pulp into a bowl (this can be dried and used for baking, or simply composted) and continue with the batches until complete.
Secure with an air-tight lid and keep in the fridge for around 3 days.
NOTE You can add flavors at the blending stage - dates or vanilla for sweetness, cinnamon or nutmeg for spice! The cream will rise to the top! Make sure you shake it well before using OR scoop off this delicious cream and drizzle over dessert! Peaches & Cream? Chocolate Pudding? Apple Pie? Perfect!
