Compote
Think of this as a healthier jam or compote, but with a healing twist of a magical ingredient called 'Kuzu' or mountain root starch.

Today I used Apple, Rosemary (a bit of a sad piece from the back of the fridge!), and blackberries (from the freezer). But, obviously, feel free to experiment with any seasonal fruits. Make it your own! πππ
To get started, you'll need:
π2 cups of your favorite seasonal fruit
π1/3 cup filtered water
π1 tsp of vanilla extract (and/or any herbs or spices that complement your fruits)
πA tiny p(pinch of sea salt
1 tsp of kuzu
Chop any larger fruits into 1cm squares (obviously, things like raspberries, blueberries or blackberries don't need this), add the salt, any flavorings and filtered water and simmer in a covered pan for around 15 minutes, stirring occasionally.
πMeanwhile, dissolve the kuzu in a tablespoon of cold water (it must not be hot!) and then stir it into your fruit mix. Keep stirring until it's thick and jammy!
πThere you go! You've got yourself a yummy, healing topping for oatmeal, yogurt, or even a slice of buckwheat bread slathered with almond butter.
πStore it in a jar in your fridge, and it'll be your go-to for up to 5 days.
